Ingredients
  • 1pound canned whole tomatoes
  • 2ounces extra-virgin olive oil
  • 7cloves garlicminced
  • 1teaspoon coarse salt
  • 1pinch crushed red pepper flakes
  • 1cup water
  • 2sprigs basil

Instructions
  1. Use an immersion blender to lightly puree tomatoes.
  2. In a large skillet (not a saucepan) over medium heat, heat the oil, add the garlic and cook until the garlic just begins to sizzle. Do not allow the garlic to brown.
  3. Add the tomatoes, water, salt, chili flakes, and basil (or oregano, if using).
  4. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.)
  5. Discard basil (if using).
