Mayonnaise
Ingredients
- 1large egg yolk
- 1teaspoon white wine vinegar
- 1/2teaspoons water
- 1/2teaspoon Dijon mustard
- 8ounces canola oil
- 1/2teaspoon fine salt
- a/n sugar
- a/n white pepper
- 2teaspoons lemon juice

Instructions
- Combine the yolks, vinegar, water, and mustard in a bowl.
- Mix well with a ballon whisk until the mixture is slightly foamy.
- Gradually add the oil in a thin stream, constantly whisking, until the oil is incorporated and the mayonnaise is smooth and thick.
- Adjust the flavor with salt, sugar, pepper, and lemon juice to taste.
- Hold refrigerated.
