Basic Mayonnaise
Ingredients
- 1 large egg yolk
- 1/2teaspoon fine salt
- 2teaspoons water
- 1teaspoon mustard
- 1teaspoon vinegar
- 1 1/2cups canola oil

Instructions
- Whisk yolks, salt, water, mustard and vinegar in a 2.5 quart bowl.
- Add a few drops of the oil initially and then slowly while whisking vigorously.
- When all the oil is incorporated add remaining lemon juice to taste.
- If the mayonnaise is too thick, it can be thinned by whisking in a little water.
Recipe Notes
Make sure the eggs are at room temperature. Make an emulsion with cold ingredients is very difficult. To warm the eggs, place whole eggs in tepid 100˚F water for 15-20 minutes.
