Ingredients
  • 1/2ounce red onions
  • 1ounce red wine vinegar
  • 3ounces mixed salad greensabout 1 cup
  • 3each cherry tomatoeshalved
  • 1/2small radish3-5 very thin slices
  • a/n fine salt
  • a/n black pepper
  • 1ounce vinaigrette

Instructions
  1. Cut the onion into a very fine julienne and soak in some red wine vinegar for 30 minutes.
  2. As needed, rinse, trim, and dry the greens and cut or tear into bite-sized pieces.
  3. Mix the greens and keep them well chilled until ready for service.
  4. Place the lettuce in a mixing bowl and season with fine salt and finely-ground black pepper.
  5. Add vinaigrette to the sides of the bowl and toss the greens into the vinaigrette. Initially, under dress the greens.
  6. Carefully, and without compressing the greens, place the greens on a chilled plate. Try to achieve maximize height when plating.
  7. Finish with a drizzle of vinaigrette and serve.
