Ingredients
  • 1cup pineapplepeeled, cored, and cut into 1/4-inch pieces
  • 1ea red bell pepperseeded and chopped small dice
  • 2ea ripe avocadopit and skin removed, and diced
  • 1tablespoon chopped fresh cilantro leaves
  • 1/2 ea small jalapeño chileseeded and minced
  • 1tablespoon dark brown sugar
  • 4tablespoon fresh lime juice
  • t.t. Salt and pepper

Instructions
  1. Gently toss pineapple, bell pepper, avocado, cilantro, and chile in medium bowl.
  2. Stir brown sugar and lime juice together in small bowl until sugar is dissolved, then stir into pineapple mixture until combined.
  3. Season with salt and pepper to taste.
  4. Serve. (This salsa is best served within 1 hour. To make ahead, mix all ingredients except avocado together and refrigerate up to 1 day. When ready to serve, add avocado and toss gently.)
