Pizza
Ingredients
- 1/4recipe Pizza Dough
- 1/4cup Tomato Sauce
- 1tablespoon Parmigiano-Reggiano cheesefinely grated
- 1/2cup mozzarellashredded

Instructions
- Heat oven to 450˚F.
- After the dough has rested at room temperature for 1 hour, coat the dough generously with flour and place on well-floured countertop.
- Using fingertips, gently flatten into 8-inch disk, leaving 1 inch of outer edge slightly thicker than center.
- Using a rolling pin, roll the dough out to a 1/4 inch thickness and irregular in shape.
- Transfer dough to pizza screen if using. If not using a pizza screen, then invert a sheet pan and use cooking spray or semolina to spray or dust the sheet pan.
- NOTE: You may create your own pizza or, use the directions below, or a combination of both. Using back of spoon or ladle, spread 1/2 cup tomato sauce in thin layer over surface of dough, leaving 1/4-inch border around edge.
- Sprinkle 1/4 cup Parmesan evenly over sauce, followed by 1 cup mozzarella.
- If using a sheet tray place in oven and cook until the crust is browned and the cheese is bubbly and beginning to brown. 10-12 minutes.
- Remove pizza, slice and serve.
