Red Wine Poached Pear
Ingredients
- 1bottle Red WineCabernet Sauvignon or Syrah
- 5ounces sugar
- 1each cinnamon stick
- 1teaspoon ground mace
- 1each clove
- 1/4teaspoon allspice
- 1/8teaspoon ground nutmeg
- 4each red Anjou Pears

Instructions
- Prepare a 176˚F/80˚C water bath.
- Simmer the ingredients until the liquid is reduced to 1/5 its original weight. Strain.
- Fill a container with water. Peel pears, submerging each fruit in the water once skin is removed so that they do not brown.
- Place each pear into a sous vide bag. Add about 2 tablespoons of poaching liquid to each bag. Seal the bags.
- Cook 30 minutes or until soft when squeezed. Chill.
- Remove the pears from the bags and reserve the poaching liquid.
- Add the poaching liquid to a small pan and reduce to syrup consistence.
- Slice the pears and serve with the reduced poaching liquid.
