Roast Turkey Breast
Ingredients
  • 4tablespoons buttersoftened
  • 2teaspoons coarse salt
  • 1/4teaspoon black pepper
  • 1whole turkey breastbone-in and skin-on, 6 to 7 pounds
  • 1cup water

Instructions
  1. Adjust oven rack to middle position and heat oven to 425˚F.
  2. Mix butter, salt, and pepper in medium bowl with rubber spatula until thoroughly combined.
  3. Work butter mixture under skin on both sides of breast and rub skin of turkey to evenly distribute butter over breast.
  4. Spray a rack with pan release and set on sheet pan.
  5. Place turkey on rack with skin side facing up.
  6. Roast turkey for 30 minutes.
  7. Reduce oven temperature to 325˚F.
  8. Continue to roast turkey until thickest part of breast registers 160˚F on instant-read thermometer, about 1 hour longer.
  9. Transfer turkey to carving board and let rest for 20 minutes before slicing.
