Ingredients
  • 1pounds breakfast sausage(like Jimmy Deans, 'Hot')
  • 2ounces butter
  • 2ounces flour
  • 1quart milk
  • a/n black pepper
  • a/n coarse salt
  • a/n red pepper flakes(optional)

Instructions
  1. Brown the sausage.
  2. Add butter as needed to supplement the fat rendered from the sausage to about 2 ounces of fat total.
  3. Scatter the flour across the browned sausage and cook for a minute or so.
  4. Add milk, a cup at a time and bring the mixture to a boil with each addition. Add milk until the desired consistency is achieved.
  5. Check seasoning and adjust as desired.
