Sausage Gravy
Ingredients
- 1pounds breakfast sausage(like Jimmy Deans, 'Hot')
- 2ounces butter
- 2ounces flour
- 1quart milk
- a/n black pepper
- a/n coarse salt
- a/n red pepper flakes(optional)

Instructions
- Brown the sausage.
- Add butter as needed to supplement the fat rendered from the sausage to about 2 ounces of fat total.
- Scatter the flour across the browned sausage and cook for a minute or so.
- Add milk, a cup at a time and bring the mixture to a boil with each addition. Add milk until the desired consistency is achieved.
- Check seasoning and adjust as desired.
