Ingredients
  • 4tablespoons mayonnaise
  • 2tablespoons cilantro leaveschopped
  • 1tablespoon peanut butter
  • 1 1/2teaspoons soy sauce
  • 1 1/2teaspoons lime juice
  • 1teaspoons gingergrated fine
  • 1/2 red bell pepperseeded and sliced thin
  • 1/2 jalapeño chileseeded and minced
  • 2 1/2cups chicken breast meatpoached
  • a/n fine salt
  • a/n black pepper

Instructions
  1. Combine mayonnaise, cilantro, peanut butter, soy sauce, lime juice, ginger, bell pepper, and jalapeño in large bowl.
  2. Add chicken and toss until coated. Season with salt and pepper.
  3. Serve or cover and refrigerate for up to 2 days.
Recipe Notes

Serve wrapped in lavash bread or a tortilla. Use more or less jalapeno as desired.
