Thai Peanut Chicken Salad
Ingredients
- 4tablespoons mayonnaise
- 2tablespoons cilantro leaveschopped
- 1tablespoon peanut butter
- 1 1/2teaspoons soy sauce
- 1 1/2teaspoons lime juice
- 1teaspoons gingergrated fine
- 1/2 red bell pepperseeded and sliced thin
- 1/2 jalapeño chileseeded and minced
- 2 1/2cups chicken breast meatpoached
- a/n fine salt
- a/n black pepper

Instructions
- Combine mayonnaise, cilantro, peanut butter, soy sauce, lime juice, ginger, bell pepper, and jalapeño in large bowl.
- Add chicken and toss until coated. Season with salt and pepper.
- Serve or cover and refrigerate for up to 2 days.
Recipe Notes
Serve wrapped in lavash bread or a tortilla. Use more or less jalapeno as desired.
