Ingredients
  • 4each russet potatoeswashed
  • 2 1/4ounces white vinegar
  • 1gallon water
  • a/n fine salt

Instructions
  1. Preheat a deep-fryer to 360˚F.
  2. Cut the potatoes (use a mandolin) into 1/4" bâtonnets.
  3. Combine the water and vinegar in a large pot and bring to a boil.
  4. Blanch the potatoes 10 minutes in the boiling water and vinegar.
  5. Fry the blanched potatoes for 50 seconds at 360℉ in a deep-fryer.
  6. Place the potatoes on a wire rack placed on a sheet pan and freeze the potatoes. Hold for service frozen.
At Service:
  1. Fry the potatoes at 360˚F for 3 1/2 minutes.
  2. Drain, season and serve immediately.
