Shirred Eggs
Ingredients
- 1/2tablespoons unsalted butterplus more to butter ramekins
- 1/4tablespoon minced yellow onion
- t.t. Salt and freshly ground black pepper
- 6leaves spinach
- 1 1/2tablespoons diced bacon, cookedor diced ham
- 1ea large egg
- 1tablespoon heavy cream
- 1tablespoon grated aged Cheddarplus extra for serving
- 1slice Sourdough bread, toastedoptional

Instructions
- Heat oven to 350 degrees F and arrange rack in middle. Butter a (4-ounce) ramekins and set aside.
- Melt 1/2 tablespoon butter in a large frying pan over medium heat. If using bacon, cook bacon until brown, add onion, season with salt and freshly ground black pepper, and cook until softened, about 1 minute.
- Add spinach and cook until spinach is well wilted, about 1 minute. Season with salt and pepper and strain very well, reserving the mixture.
- Place diced bacon or ham on bottom of ramekins and top with spinach onion mixture. Crack egg into ramekin, place 1 tablespoon cream over each egg, and top with cheese.
- Put ramekin on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 10 to 12 minutes. The eggs will continue to cook after you take them out of the oven.
- Meanwhile, spread remaining 1 tablespoons butter on a slice sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.
