Ingredients
  • 1/2each zuchini
  • a/n olive oil blend
  • 1/2tablespoon shallotminced
  • 1/2teaspoon garlicminced
  • 1/2tablespoon parsleyminced
  • a/n coarse salt
  • a/n black pepper

Instructions
  1. Cut the zucchini in half lengthwise, then cut each half lengthwise again. Using your chef's knife cut the seeds/membrane away from the top of each slice of zucchini. Then cut zucchini into 1/2 inch slices.
  2. Heat a medium-sized sauté pan over medium high heat and add 1-2 teaspoons of oil.
  3. Add the zucchini and saute until tender.
  4. Next, add the shallot and garlic and saute for about 30 seconds, being careful not to burn the shallot or garlic.
  5. Season with salt and pepper. Add the parsley and toss to mix.
