Zucchini Sauté Provençale
Ingredients
- 1/2each zuchini
- a/n olive oil blend
- 1/2tablespoon shallotminced
- 1/2teaspoon garlicminced
- 1/2tablespoon parsleyminced
- a/n coarse salt
- a/n black pepper

Instructions
- Cut the zucchini in half lengthwise, then cut each half lengthwise again. Using your chef's knife cut the seeds/membrane away from the top of each slice of zucchini. Then cut zucchini into 1/2 inch slices.
- Heat a medium-sized sauté pan over medium high heat and add 1-2 teaspoons of oil.
- Add the zucchini and saute until tender.
- Next, add the shallot and garlic and saute for about 30 seconds, being careful not to burn the shallot or garlic.
- Season with salt and pepper. Add the parsley and toss to mix.
