Roasting and Peeling Chilies

Chilies and peppers may be roasted and peeled in a number of ways. One way is to toast them directly over a flame such as a burner until evenly blistered. Another way is to very lightly oil them and roast them in an over on its highest heat. Once the peppers are evenly charred they should be wrapped with plastic or foil and allowed to sweat as they cool. The skins should easily peel from the flesh at this point.
