Beignets (New Orleans Style)

Yield: 35 Beignets

Ingredients:

  • 2 1/4 teaspoons dry yeast
  • 3-1/2 cups flour
  • 1 teaspoon salt, fine
  • 1/4 cup sugar
  • 1-1/4 cups milk
  • 3 eggs, beaten
  • l/ 4 cup butter, melted
  • 1 cup powdered sugar

Directions:

  1. Dissolve yeast in four tablespoons of warm (110℉) water. Set aside. 
  2. In a large mixing bowl, combine flour, salt and sugar and mix well. Fold in dissolved yeast, milk, eggs and butter. Continue to blend until smooth dough is formed. 
  3. Place dough in a metal bowl, with a towel and allow to rise for one hour in a warm place in the kitchen. 
  4. Place the dough on a well floured surface and roll out to one quarter inch thickness. Cut into rectangular shapes, two by three inches, and return to lightly floured pan. Cover with a towel and allow dough to rise again, 20-30 minutes.. 
  5. Deep fry at 350℉, turning once, until golden brown. Drain and dust generously with powdered sugar.
