Yield:~1 Quart
Ingredients:
- 1 tablespoon olive oil
- 1/2 cup celery, diced
- 1/2 cup onion, diced
- 1/2 cup carrots, diced
- 1/2 green bell pepper, diced
- 1 clove garlic, minced
- 2 cups chicken stock or broth
- 3/4 cup canned tomatoes, diced
- 1/4 head of cabbage, chopped
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Method:
- Heat olive oil in a medium pot over medium heat.
- Sweat celery, onions, carrots, and bell peppers.
- Add garlic, sauté another 30 seconds.
- Add chicken stock.
- Add tomatoes and cabbage.
- Bring to a boil and then reduce heat.
- Cook until cabbage is tender.
- Add oregano, basil, red pepper flakes, black pepper and salt.
- Adjust seasoning as needed.
- Serve.
