Cabbage Soup

Cabbage Soup

Yield:~1 Quart

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 cup celery, diced
  • 1/2 cup onion, diced
  • 1/2 cup carrots, diced
  • 1/2 green bell pepper, diced
  • 1 clove garlic, minced
  • 2 cups chicken stock or broth
  • 3/4 cup canned tomatoes, diced
  • 1/4 head of cabbage, chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Method:

  1. Heat olive oil in a medium pot over medium heat.
  2. Sweat celery, onions, carrots, and bell peppers.
  3. Add garlic, sauté another 30 seconds.
  4. Add chicken stock.
  5. Add tomatoes and cabbage.
  6. Bring to a boil and then reduce heat.
  7. Cook until cabbage is tender.
  8. Add oregano, basil, red pepper flakes, black pepper and salt.
  9. Adjust seasoning as needed.
  10. Serve.
