At home*, prepare each of the following recipes and present a report, with photographs on your (and your guest’s) impressions of the dish. Present this report at: https://www.facebook.com/culinaryexams.
- Buttermilk Fried Chicken, Mashed Potatoes and Gravy with Sautéed Green Beans and a Southern Biscuit
In addition to the above instructions, bring each of these items to your instructor for evaluation and critique:
- Decorated Cake ‐ Prepare and decorate one 8” cake of your choice demonstrating skills through application of medium and the utilization of the proper tools. Cake should be cut into 3rds, macerated, and decorated with medium using a minimum of two piping techniques. Present on suitable platter, plate a cut portion to present.
Practical Skills Demonstration: 3.0 Hours
- Prepare, bake one chocolate-layered cake with a ganache glaze.
- Plate a piece of the cake from above and serve with an appropriate garnish.
- Prepare and bake 12 yeast-leavened rolls.
- Prepare and bake and serve 12 portions on a platter of a banana nut quick bread.
