Red Wine Berry Sauce
Ingredients
- 2tablespoons bacon drippins or corn oil
- 1/4cup minced shallots
- 2 teaspoons minced garlic
- 1/4cup champaign vinegar
- 1 teaspoon dried red pepper flakes
- 1 cup unsweetened raspberry puree
- 1/4cup brown sugar
- 1/4 cup Pinot Noir
- 1/2teaspoon seafood basemixed with 1/4 cup water
- 1/4 cup chicken stock
- 2tablespoons Dijon mustard

Instructions
- Heat bacon drippings (or corn oil) in a small, non-reactive saucepan, add the shallot and sweat over low heat about 1 minute, until softened.
- Add the garlic and dried pepper flakes, saute a few seconds more, then add the remaining ingredients
- Simmer over medium heat for about 15 minutes.
- If necessary, increase the heat and reduce, stirring constantly, to a full-bodied nappe consistency. May use a cornstarch slurry for body.
