Bread Stuffing
Ingredients
- 1/2cup butter
- 1cup celerypeeled, small dice
- 1 1/2 cup yellow or white onionmedium dice
- 2 tablespoons fresh sagechopped
- t.t. salt
- t.t. black pepper
- t.t. lemon juice
- 1qt 1/2'' cubed ciabatta bread
- 1 ea eggbeaten
- 1/2 +cup chicken stock
- 2tablespoons parsley

Instructions
- Melt the butter in a 10'' saute pan, add the celery and onion, and sweat over low heat, covered, about 5 minutes, until soft.
- Add the sage to the onion mixture and season highly with salt, pepper and lemon juice.
- Toss the celery mixture with the bread cubes.
- Mix the egg with the chicken stock and toss with the bread cubes. (The mixture should hold together in a loose ball when lightly squeezed; if not, add more stock).
- Correct the salt, and add parsley. Place in cooler and chill.
