Broccoli Puree
Ingredients
- 4oz broccoliflorets
- 1cup cream
- 2oz butter
- as needed Salt and pepper

Instructions
- Blanch broccoli in salted water until very tender.
- Heat cream and butter together and keep warm.
- Once the broccoli is done, transfer to a blender and add half of the cream and butter mixture. Puree on high until you achieve a smooth puree. The consistency should be thick and barely pourable. If it is too thick thin it out with more cream and butter. Note: to achieve a smooth texture puree for at least a minute or two.
