Chinese-American Beef/Broccoli in Brown Sauce
Ingredients
- 3oz thinly sliced beefchuck
- 2oz brocolli floretsslightly blanched in salted water
- 1oz water chestnuts
- 1teaspoon toasted seseme seeds
- 3oz cooked lo meinoptional
- 1/2cup Brown Veal Stock
- 1.5tablespoons oyster sauce
- 2teaspoons dark soy sauce
- 2teaspoons sugar
- 1.5tablespoons corn flour or potato starch

Instructions
- 1. Cook lo mein and set aside (if using) 2. Saute beef and reserve. 3. Blanch broccoli in salted water for about 1 to 2 minutes. Broccoli should still be somewhat firm. Strain and set aside.
- Place veal stock, oyster sauce, soy sauce, sugar and corn flour in a small deli and shake to mix evenly.
- Put all the ingredients, except for the sesame seeds into a saute pan and bring to a boil. adjust season if needed. serve in a bowl or plate. top with sesame seeds and scallions.
