Sweet and Hot Sauce
Ingredients
- 3tablespoons sugar
- 3tablespoons water
- 3tablespoons white rice wine vinegar
- 1tablespoon crushed dried red pepper
- 2teaspoons minced fresh garlic
- 1tablespoon minced scallion
- 1tablespoon ketchp
- 2tablespoons fish sauce

Instructions
- Combine the sugar, water, vinegar, and dried red pepper in a small nonreactive saucepan. Heat just to boil and then cool to room temperature
- Stir in the remaining ingredients
- Taste and correct the seasoning to achieve a sweet-tart-salty flavor balance.
