Red Chile Sauce (Chile Rojo Salsa)

Ingredients:
  • 2 tablespoons vegetable oil
  • 1 medium onion, small dice
  • 3 medium cloves garlic, minced
  • 3 tablespoons chili powder
  • 2 teaspoons coriander, ground
  • 2 teaspoons cumin, ground
  • ½ teaspoon salt, coarse
  • 2 teaspoons sugar
  • 2-8 ounce cans tomato sauce
  • ¼ cup water
Method:
  1. In a medium sauce pan, heat the oil over medium-high heat.
  2. Add the onion and cook, stirring occasionally, until softened and beginning to brown, about 5 minutes.
  3. Add the garlic, chili powder, coriander, cumin, salt, and sugar; cook, stirring constantly, until fragrant, about 30 seconds.
  4. Add the tomato sauce and water and simmer for 15 minutes.
  5. Strain the sauce and reserve.
