Chinese Chicken Broth

Ingredients:
  • 1-3 pound whole chicken
  • 10 cups water, cold
  • 3 slices ginger
  • 2 each green onions, cut into 1-inch pieces
  • 1 tablespoon Shaoxing rice wine
  • salt, coarse, to taste
Method:
  1. Rinse the chicken under running water.
  2. Place in a large pot with 10 cups water (or just enough to cover).
  3. Add the ginger, green onion, and rice wine.
  4. Bring to just a boil over medium heat and reduce heat to a gentle simmer, skimming off any foam that rises to the top.
  5. Cover, simmer for 30 minutes.
  6. Remove the chicken, cool briefly and pull meat from carcass and reserve for another use.
  7. Return the carcass to the pot a simmer for 90 minutes.
  8. Strain the broth and use as needed.
