Serves 2
Ingredients:
- 2 tablespoons dried wakame
- 2 tablespoons dried or fresh shittake mushroms, sliced
- 1 tablespoon shiro miso (white fermented-soybean paste)
- 2 cups Dashi
- 2 ounces firm tofu, drained and cut into 1/2-inch cubes
- 1 tablespoon scallion greens, thinly sliced
Method:
- Prepare Wakame: Cover wakame with water and let stand 5 minutes, or until reconstituted. Drain.
- Prepare Dried Mushrooms (if using): Soak dried mushrooms for 30 minutes in warm water.
- Prepare Soup: Dissolve miso in 1/2 cup dashi in a bowl until smooth.
- Heat remaining dashi in a saucepan over moderately high heat until hot.
- Lower the heat, stir in miso mixture, tofu, reconstituted wakame and mushrooms.
- Simmer 1 minute and remove from heat.
- Do not boil.
- Add the scallion greens and serve.
- Optional Additions: Udon Noodles (Cooked), Baby Bok Choy (Blanched)
