Miso Soup

Serves 2

Ingredients:
  • 2 tablespoons dried wakame
  • 2 tablespoons dried or fresh shittake mushroms, sliced
  • 1 tablespoon shiro miso (white fermented-soybean paste)
  • 2 cups Dashi
  • 2 ounces firm tofu, drained and cut into 1/2-inch cubes
  • 1 tablespoon scallion greens, thinly sliced
Method:
  1. Prepare Wakame: Cover wakame with water and let stand 5 minutes, or until reconstituted. Drain.
  2. Prepare Dried Mushrooms (if using): Soak dried mushrooms for 30 minutes in warm water.
  3. Prepare Soup: Dissolve miso in 1/2 cup dashi in a bowl until smooth.
  4. Heat remaining dashi in a saucepan over moderately high heat until hot.
  5. Lower the heat, stir in miso mixture, tofu, reconstituted wakame and mushrooms.
  6. Simmer 1 minute and remove from heat.
  7. Do not boil.
  8. Add the scallion greens and serve.
  9. Optional Additions: Udon Noodles (Cooked), Baby Bok Choy (Blanched)
