Thai Fried Rice

Thai Fried Rice


A can of ground cinnamon is shown.

Serves 2
Ingredients
  • 2 tablespoons oil, for frying
  • 1 clove garlic
  • 1 egg
  • 4 ounces pork loin, 1/4″ pieces
  • 1/2 teaspoon salt, coarse
  • 1/2 teaspoon pepper, black, to taste
  • 1/3 cup onion, diced, small
  • 1/3 cup carrot, cut brunoise
  • 1/3 cup broccoli, diced, small
  • 1 teaspoon sugar
  • 1 1/2 cups rice, cooked, cooled
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 green onion, white and green parts, sliced
Method:
  1. Over a medium flame, heat a large non-stick sauté pan.
  2. Add oil to the hot pan and then add the garlic.
  3. Sauté the garlic until fragrant, about 30-45 seconds.
  4. Add the eggs to the garlic and oil and scramble softly.
  5. Increase the flame and add the pork.
  6. Season the pork with some salt and pepper and sauté the pork until just cooked through.
  7. Add the carrots, onion and broccoli and sauté until softened, 1-2 minutes.
  8. Season again with some more salt and some sugar.
  9. Lower the heat and fold in the rice with the other ingredients.
  10. Sauté until all ingredients are well incorporated.
  11. Add soy sauce and remaining sugar. Sauté for 5 minutes. Adjust salt, sugar and soy sauce as needed.
  12. Fold in green onions and serve immediately.
