Blue Cheese Dressing

Yield: 1 cup
 
Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons whole milk; more as needed
  • 3 ounces crumbled blue cheese; more to taste
  • 2 teaspoons finely grated shallot
  • 1 small clove finely grated garlic
  • 1-1/2 teaspoons lemon juice
  • 1/4 teaspoon coarse salt
  • black pepper, to taste
Method:
  1. In a medium bowl, stir the mayonnaise, sour cream, milk, blue cheese, shallot, garlic, lemon juice, salt, and pepper.
  2. Cover and refrigerate for at least 3 hours to let the flavors develop.
  3. Before using, taste and adjust the seasonings if necessary.
  4. The dressing will thicken as it sits and may need to be thinned with more milk.
