Ingredients — preview

  • 1 1/2 pounds beef sirloin sliced thin (or medium dice)
  • 1 tablespoon soy sauce
  • 2 tablespoons sesame oil
  • 1 teaspoon coarse salt
  • 1 tablespoon Shaoxing rice wine
  • 1 large egg white lightly beaten
  • 2 tablespoons peanut or corn oil
  • 4 each dried red chiles split
  • 1 tablespoon garlic minced
  • 1/2 tablespoon ginger grated
  • 1 teaspoon Szechwan pepper toasted, crushed

Preparation — preview

  1. Combine the soy sauce, sesame oil, rice wine/sherry, egg white and salt.
  2. Add the beef and stir to coat.
  3. Marinate for 30 minutes while prepping rest of ingredients.
  4. Over medium heat, add oil to a small sauce pan.
  5. Add the dried chilies and cook until they begin to darken, about 1 minute.
  6. Add remaining ingredients and continue to cook to infuse the oil.
    Note: Be careful as to not burn the garlic and ginger. If the garlic is starting to brown take oil off heat. Let rest for to infuse oil.
  7. Strain the oil and reserve.
