“Demonstrate” or “prepare to standard” refers to a professional-commercial food service standard. Specifically, the serviceware is to be clean, of appropriate size/shape and the appropriate temperature for the dish. Food is to professionally plated, properly cooked, and served at the service temperature for that dish.
Hot food hot, cold food cold.
