Deep-Fried Cod

Servings: 10

Ingredients:

  • 3 3/4 pounds cod fillets
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • oil, for frying
  • 4 ounces flour
  • 1 quart Beer Batter (see recipe)

Directions:

  1. Slice thick filets in half-lengthwise
  2. Heat the oil to 350˚F.
  3. Dry the filets off with paper towels.
  4. Season the fish with salt and pepper.
  5. Dip one filet at a time into the beer batter to coat completely.
  6. Lower the fish into hot oil and cook until golden brown and crisp.
  7. Drain fish of excess oil.
  8. Serve IMMEDIATELY with a remoulade, tarter sauce or malt vinegar.
