Potato Chip, The Perfect

Ingredients:

  • 1 each potatoes, russet, washed
  • 2 tablespoons vinegar, white
  • 2 quarts water
  • oil, for frying

Directions:

  1. Slice the potatoes (use a mandolin) into 1/16″ slices.
  2. Blanch the potatoes 3 minutes in boiling water and vinegar (2 quarts water, 2 tbsp vinegar)
  3. Dry the potatoes.
  4. Final fry at 325℉ for 5 minutes.  Season and serve hot.
