Classic Tartar Sauce

 
Ingredients
  • 4 ounces mayonnaise
  • 2 tablespoons onion, minced
  • 2 teaspoons shallot, minced
  • 1 tablespoon celery, peeled, minced
  • 1 tablespoon cornichons, minced
  • 1/2 teaspoon salt, course
  • 2 teaspoon lemon juice
Method:
  1. Mix onions and shallots with salt.
  2. Line a bowl with paper towel, and place onions and shallots in it.
  3. Let stand 15 minutes to remove excess moisture.
  4. In a small pot of boiling water, blanch celery until bright green and just soft.
  5. Chill in ice bath, and strain.
  6. Line a bowl with paper towel, and place celery in it to remove excess moisture.
  7. Combine mayonnaise, onions, shallots, celery, cornichons, and lemon juice in bowl.
  8. Mix well.
