Ingredients
- 4 ounces mayonnaise
- 2 tablespoons onion, minced
- 2 teaspoons shallot, minced
- 1 tablespoon celery, peeled, minced
- 1 tablespoon cornichons, minced
- 1/2 teaspoon salt, course
- 2 teaspoon lemon juice
Method:
- Mix onions and shallots with salt.
- Line a bowl with paper towel, and place onions and shallots in it.
- Let stand 15 minutes to remove excess moisture.
- In a small pot of boiling water, blanch celery until bright green and just soft.
- Chill in ice bath, and strain.
- Line a bowl with paper towel, and place celery in it to remove excess moisture.
- Combine mayonnaise, onions, shallots, celery, cornichons, and lemon juice in bowl.
- Mix well.
