Yield: 500g

Ingredients:

  • 90 grams egg yolk
  • 45 grams distilled vinegar
  • 45 grams water
  • 18 grams egg yolk powder
  • 9 grams glucose syrup
  • 9 grams salt
  • 3 grams MSG
  • 0.6 grams soy lecithin
  • 300 grams vegetable oil

Directions:

  1. Combine all ingredients except oil in blender.
  2. Blend on low speed to mix. Scrape sides and bottom of blender pitcher if needed.
  3. While blending, slowly drizzle in oil until mixture is thick and thoroughly combined.
