Tempura Batter

Tempura Batter

Yield: 3 cups

Ingredients:

  • 1 cup cake flour
  • 1 teaspoon fine salt
  • 1 cup club soda, cold
  • ½ cup ice water
  • 1 large egg yolk

Method:

  1. Combine the flour and salt; set aside.
  2. Combine wet ingredients in a medium-sized bowl.
  3. Add dry ingredients all at once to egg-water mixture; stir briefly, just enough to combine mixture.
  4. The batter will be lumpy. Do not over mix.
