Midterm Exam (4 Hours):
No lecture. We will meet in the Kitchen. Be prepared to start immediately.
1. Knife Cuts and Fabrication:
- 1/2 potato or carrot Julienne
- 1/2 potato or carrot Brunoise
- 1/2 potato or carrot Batonnet
- 1/2 potato or carrot Macedoine
2. Complete the following:
- Maple Glazed Chicken Breast, Stone-Ground Grits and Green Vegetable.
- Fried Chicken, Mashed Potatoes, Gravy, Carrots.
- French Omelet
